Buttermilk Cornbread Muffins

 These cornbread muffins are going to be your new go-to! Next time you barbecue, serve these on the side. Next time you make chili for game day, these will be the perfect accompaniment... the list goes on. Cheesy cornbread muffins will always be a win in our book!

10 min active, 30 min total; makes 8 cornbread muffins



  • 2 oz butter
  • 1/2 cup cornmeal
  • 1/2 cup flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 6 Tbsp sugar
  • 2 eggs
  • 1/2 cup buttermilk
  • 1/2 cup shredded cheddar
  • muffin tin



  • Preheat oven to 375°F
  • Grease 8 muffin rounds
  • Melt butter in the microwave or on the stove top
  • Mix cornmeal, flour, salt, baking powder & baking soda in a bowl
  • In another large bowl, stir to combine melted butter, sugar & eggs
  • Add buttermilk to egg mixture & stir to combine
  • Add dry mix & cheese to egg mixture, then stir until incorporated
  • Pour into greased muffin tins then transfer to the oven and bake 20—30 min, until cooked through and golden
  • Serve with bbq ribs, roasted chicken & veggies, chili... whatever you'd like!
