Chocolate Avocado Pudding

Surprise! This decadent-looking chocolate pudding is healthier than you think—it’s mostly avocado! Mixed with cocoa powder, maple syrup, vanilla & almond, you could trick your taste buds into thinking you’re enjoying the creamiest, most authentic chocolate pudding out there, completely avocado-free. 

 

 

INGREDIENTS:

  • 3 avocados
  • ¾ cup whole milk
  • 1/3 cup cocoa powder
  • 1/3 cup maple syrup
  • 1 ½ tsp almond extract
  • 2 tsp vanilla extract
  • ½ cup heavy cream
  • 2 Tbsp powdered sugar
  • ¼ tsp ground ginger
  • 1 ½ tsp coarse sea salt
  • 1/3 cup granola

 

INSTRUCTIONS:

1. PREPARE PUDDING

  • Remove pit from avocados and scoop flesh into food processor or high speed blender and pulse until creamy
  • Add milk, cocoa powder, maple syrup, almond extract & 1 ½ tsp vanilla extract, then blend   until combined, scraping down sides as needed

2. MAKE WHIPPED CREAM

  • In a bowl, beat heavy cream with a hand mixer until peaks form
  • Add powdered sugar, ground ginger & remaining vanilla extract (½ tsp) and continue to beat until stiff

3. GARNISH & GATHER

  • Scoop pudding into bowls, sprinkle with sea salt then top with whipped cream & granola
