Georgia Cheese Wafers

These delicious homemade cheese wafers will make a great holiday gift or appetizer to serve to your friends & family! Combine cheddar cheese curds & nutty tomme cheese with Banner Butter’s red pepper mash butter, then stir in a dash of paprika & fresh rosemary. Roll dough into balls, flatten with a fork and bake to crisp, golden-brown perfection.

 

 

You’ll need:

parchment paper

1 Tbsp rosemary

3 oz tomme cheese

3 oz cheddar cheese curds

2 ½ oz red pepper mash Banner Butter

1 ½ oz unsalted butter

1 cup flour

½ tsp baking powder

½ tsp paprika

¼ tsp salt

 

 

 

Instructions:

1. PREHEAT OVEN

  • Preheat oven to 350°F
  • Line a baking sheet with parchment paper
  • Chop rosemary

 

2. MAKE DOUGH

  • Process tomme & cheese curds in a food processor into very small pieces
  • In a large bowl with a hand mixer or in a stand mixer, cream together both types of butter & cheese on low
  • In another bowl, combine flour, baking powder, paprika, rosemary & salt
  • Slowly add flour mixture to butter & beat on med for 2—3 min until crumbly, then knead until dough forms

 

3. BAKE CHEESE STRAWS

  • Drop 1 Tbsp sized balls (golf ball size) onto a parchment lined baking sheet, leaving space between balls
  • Use the back of a fork to form a criss-cross pattern and flatten balls
  • Bake 15—20 min, until golden

 

4. GARNISH & GATHER

  • Cool wafers completely and serve, or package into a gift bag and tie with ribbon to gift!
