Blue Ribbon Baked Chicken

This meal was my pick for the week and the minute I read the recipe I knew which wine I was taking home. 2016 Le Grand Caillou, Sauvignon Blanc – Loire Valley, France. When I don’t want to spend money on Sancerre this Sauv Blanc is always my next choice. Dry, fresh and sharp with notes of white flowers, passion fruits, lime zest. Lip-­smacking good!


Cilantro-­Lime Carnitas

I almost always pair my Spanish meals with a Spanish Cava (sparkling wine), especially if the dish in question is on the spicy side. 2015 Naveran Brut Nature Cava – Penedes, Spain. Estate bottled, vintage cava produced in the Champagne method. This is extremely high quality at an alarmingly low cost!Floral notes that are followed by notes of fresh Meyer lemon and green apple, silky and penetrating on the palate.



Chicken Burgers

Carignan is a grape that originated in Spain and is one of the most widely planted grapes in France. Used more as a blending grape to help add intense color, acidity and fresh tannins. 100% Carignan is delicious when done right. My new fave is the 2016 Weon – Maule Valley, Chile. Un-­oaked, all natural wine – light, bright, fresh and lively with a juicy, soft mid-palate. Blue and red berries, rhubarb, with a hint of baking spice.

Seared Salmon Poke Bowl

I did not have to think twice about what wine to pair with this dish. 2016 Demaire Arneis – Piedmont, Italy. Arneis is extremely crushable and refreshing white wine. Demaire is my favorite – brilliant, sunny, and bright with aromas light peach and apricot, wild broom and chamomile.  It is a well-balanced, fresh wine.




Rosemary-­Dijon Steak

2015 Domaine de Fontsainte Rouge – Corbieres, France. This is a constant, daily, value wine. The magic of this wine is that it pairs well with just about anything. A blend of Carignan, Grenache and Syrah that is partially aged in French Oak with the remained aged in cement tank. Dark purple lush fruits with hints of earthiness and bouquet that invites you into the glass.
