Peach & Avocado Guacamole

This guacamole is perfect for sharing...or for eating all on your own because it's just do delicious. Brush triangles of corn tortillas with melted butter & red pepper flakes, then bake for crispy Southern-style chips with just the right amount of kick. Mix together creamy avocados, lime & cherry tomatoes to make your guac, then top with a tasty relish made with fresh peaches & jalapeño.

YOU'LL NEED:

  • (5) 6” corn tortillas
  • 1 oz salted butter
  • 1/4 tsp ground red pepper
  • peach
  • 1 jalapeño
  • 2 limes
  • 1/3 cup diced red onion
  • 2/3 cup cherry tomatoes
  • 1/3 cup cilantro
  • avocados
  • salt & pepper

 

INSTRUCTIONS:

1. MAKE CHIPS

  • Preheat oven to 350ºF 
  • Stack tortillas and cut into 8 triangles (like a pizza)
  • Place butter & ground red pepper in a bowl, then microwave until melted
  • On a baking sheet, toss chips with melted butter and spread into a single layer
  • Sprinkle with salt then bake 13–16 min, flipping halfway through, until crisp and golden

2. PREP RELISH

  • Remove pit and small dice peach
  • Remove seeds and finely chop half of jalapeño (use 1/4 of jalapeño for less heat)
  • Juice limes
  • Combine peach, jalapeño & HALF of red onion with HALF of lime juice, and salt & pepper to taste, then set aside

3. MAKE GUACAMOLE

  • Dice cherry tomatoes
  • Chop cilantro
  • Cut each avocado in half, remove seed, then scoop out flesh into a large bowl and smash
  • Add remaining lime juice, remaining red onion, tomatoes, HALF of cilantro & salt to taste, then stir to combine

4. GARNISH & GATHER

  • Scoop guacamole into a serving bowl then top with peach relish & remaining cilantro
  • Serve with red pepper tortilla chips for dipping, and enjoy!
