Rosey in Love Cocktail

You'll be sure to impress your valentine with this sophisticated (and dleicious!) cocktail. Make a refreshing simple syrup of muddled cranberries & mint, combining with freshly squeezed orange juice for the perfect balance of sweet & tart. Roll the rim of each glass into  sugar for a sparkly finish and top it off with sparkling rosé, mint sprigs & an orange twist.

 

YOU'LL NEED:

  • 1 cup cranberries
  • 1/2 cup sugar
  • 2 oranges
  • 1/2 cup mint
  • cup sugar for rim (optional)
  • 1 bottle sparkling rosé
  • mesh strainer
  • champagne glasses

 

 

INSTRUCTIONS:

1. MAKE SYRUP & PREP ORANGE

  • In a pot, bring 1 cup water to a boil
  • Place 6 cranberries in a small bowl and transfer to freezer
  • Add sugar to water and whisk to dissolve then add remaining cranberries and cook over med-low for 12-15 min, until cranberries are very soft, gently crushing them as you stir occasionally
  • Cut peel from 1 orange (reserving rest of the orange) and then cut into 8 thin strips (remove the white pithy part of the peel) then tightly curl each strip into a spiral and set aside
  • Juice both oranges
  • Remove mint from stems, keeping leaves whole

 

2. MAKE COCKTAIL

  • When cranberries are soft, add most of the mint leaves (reserving 6-8 for garnish) to pot and muddle with the back of a spoon
  • Strain syrup through a mesh strainer and discard solids
  • Combine orange juice & cranberry syrup

 

3. GARNISH & GATHER

  • Fill a shallow plate or bowl with water
  • Put the strawberry sugar for rim in another shallow plate or bowl
  • Sugar the rim of each champagne glass by dipping the rim of the glass in water then into sugar
  • Drop 1 frozen cranberry into each glass, add 2-3 Tbsp of syrup, then fill with sparkling rosé
  • Garnish each cocktail with mint leaf & orange twist, and enjoy!
