Smoked Trout Bagels

Bagels are always a great start to the day, but add pecan smoked trout and avocado crema and you've got a real star for breakfast. Follow along with our recipe below. After all, breakfast really is the most important meal of the day!

INGREDIENTS:

 

 

INSTRUCTIONS:

1. PREHEAT OVEN & PREP VEGGIES

  • Preheat oven to 350°F for bagels (or skip this and toast in toaster in section 2)
  • Slice bagels in half
  • Slice tomatoes
  • Chop chives
  • Zest and juice half of lemon, cut the other half into wedges
  • Cut avocado in half, remove pit then scoop flesh into a bowl and mash

2. MAKE CREMA & PREP TROUT

  • Place bagels in oven or toaster to toast
  • Add lemon juice, lemon zest, crème fraîche, sour cream, chives, salt & pepper to avocado and stir to combine
  • Roughly break or chop trout into large pieces
  • Drain capers

3. GARNISH & GATHER

  • Spread crema onto bagel and top with trout, red onion, capers, tomatoes & sprouts
