Steak & Eggs for Father's Day

Dad's going to love this brunch! Dust steak with coriander, salt & pepper, then pan-sear to perfection. Top sliced steak with a mouthwatering relish of juicy charred tomatoes, red onion, bright lemon, parsley & fresh jalapeño, then fry eggs on the side just the way you like them. Enjoy alongside a flavorful spinach sauté, complete with a touch of cream, a sprinkle of parmesan & crumbled bacon. This recipe was an instant favorite in the G&G test kitchen, and it will be the perfect Father's Day brunch for Dad this weekend!

 40 min active; 40 min total; serves 2

 

INGREDIENTS:

  • 1 large tomato
  • 1 jalapeño
  • (2) 6-8 oz steaks, sirloin or desired cut
  • 2 tsp coriander
  • 2 slices bacon
  • 1/3 cup diced red onion
  • Juice of 1 lemon
  • 2 Tbsp fresh parsley, chopped
  • 5 oz spinach
  • 3 Tbsp heavy cream
  • 2 Tbsp grated parmesan
  • 4 eggs
  • Olive oil 
  • Salt & pepper

 

INSTRUCTIONS:

1. CHAR TOMATO & COOK STEAK

  • Slice tomato into 1/2” thick slices
  • Seed and small dice half of jalapeño (discard other half or save for another use)
  • Heat 2 tsp oil in large sauté pan over high
  • Add tomato slices, cook 2 min per side or until charred, then remove from pan and chop
  • Pat steak dry then season with salt, pepper & coriander
  • Heat 1 Tbsp oil in another sauté pan over med-high
  • Add steak and cook 4-7 min per side, to desired doneness, then remove and let rest 5-10 min

 

2. COOK BACON & PREP RELISH

  • Heat the same pan used for tomato over med-high
  • Add bacon and cook 4-6 min per side, until crisp, then remove to a paper towel-lined plate, leaving drippings in the pan
  • In a small bowl, combine tomato, 2/3 of red onion, diced jalapeño, lemon juice, 1 Tbsp olive oil, parsley, and salt & pepper to taste

 

3. COOK SPINACH & FRY EGGS

  • Remove large stems from spinach (if any) and roughly chop
  • Add remaining red onion to bacon drippings and cook 1 min over med-high
  • Add spinach, in batches, until wilted
  • Stir in heavy cream, parmesan, and salt & pepper and cook another 1-2 min, until thickened, then remove from heat
  • Crumble bacon into spinach and set aside
  • In the same pan used for steak, heat 1 Tbsp oil over med, crack each egg into pan, and cook 2-3 min, or until desired doneness (flip eggs over to continue cooking if desired)

 

4. GARNISH & GATHER

  • Slice steaks against the grain and arrange eggs & spinach on the side, then top with relish and enjoy!
