It's mini watermelon season! These cute little melons from Rise N' Shine Organic Farm are the perfect size–so you won't end up with an extra half of a watermelon in your fridge for weeks. Of course, these perfectly juicy and sweet mini melons are delicious on their own, but if you want to try them in a dish, use them in this Vietnamese Watermelon Salad! It's summery and fresh, and a squeeze of lime with fish sauce really adds a punch of flavor.
YOU'LL NEED:
- 1 Thai chili
- 1 lime
- 2 Tbsp fish sauce
- 1 mini watermelon
- 1 small cucumber
- handful of fresh basil
- handful of fresh mint
- handful of fresh cilantro
- 2 Tbsp peanuts
- 2 scallions
INSTRUCTIONS:
- Mince Thai chili and juice lime
- In a small bowl, mix chili, lime juice & fish sauce with 2 Tbsp warm water to make dressing
- Cut watermelon into 1-inch cubes
- Cut cucumber into half moons
- Roughly chop herbs & peanuts and thinly slice scallions
- Add watermelon, cucumber & dressing to a serving bowl and toss to coat melon & cucumber with dressing, then garnish with herbs, peanuts & scallion and enjoy! This is the perfect side for grilled meats, a great dish for summer potlucks, or perfect for eating by the pool as a snack.
