We'll admit it... we have a love affair with pesto. Can you really blame us? It's incredibly easy to make, and adds so much flavor to any dish! Not to mention that it's incredibly versatile. Here's our favorite pesto recipe!
4 cups seasonal greens (arugula, kale, spinach etc.)
2 lemons, juiced
1/2 cup olive oil
1/3 cup parmesan
1/2 cup pecans
salt & pepper to taste
G&G tip: If you like a little kick, add 1/4 to 1/4 teaspoon of red pepper flakes
Trim any roots from greens and then combine all ingredients in a food processor or blender until paste forms. Enjoy as a topping for chicken or fish, mixed in with pasta, as sauce for a pizza, or as a spread for sandwiches. Freeze your pesto in ice cube trays to use later! The possibilities are endless!
