Cool Off with These Cold Summer Salads

Newsflash, Atlanta - it's hot! That means it's time to eat all things cold, including these delicious cold summer salads. Make them ahead and enjoy all week! 

Sesame Noodle Salad

1/2 lb rice stick noodles, cooked
2 Tbsp sesame oil
1 Tbsp fish sauce
1/4 cup sweet chili sauce
1 clove garlic, minced
1/3 cup peanuts, crushed
2 Tbsp sesame seeds
1 cup sweet peppers, thinly sliced
1 cup cucumbers, thinly sliced
2 T scallions, chopped

  1. In a mixing bowl, combine noodles all ingredients
  2. Toss to coat
  3. Season with salt & pepper

BLT Salad

4 slices Pine Street Market bacon, cooked & crumbled
2 Tbsp bacon fat, reserved from cooking
1/2 cup tomatoes, chopped
2 Tbsp sherry vinegar
2 Tbsp honey
3 cups lettuce, chopped

  1. In a bowl, whisk together bacon fat, honey, vinegar, salt & pepper until emulsified
  2. Arrange lettuce on a plate & top with tomatoes & bacon
  3. Drizzle with dressing

Green Bean Salad with Peaches & Pecans

2 peaches, cut into wedges
1 lb green beans, trimmed & baked
2 T green beans, chopped
1 T sherry vinegar

  1. In a bowl, combine sherry vinegar with 1 Tbsp olive oil
  2. Add peaches, green beans, pecans, salt & pepper then toss to combine
