A Case for Roasting Your Fruit

The flowers are blooming and that can only mean one thing – it’s time to enjoy the bounty of Spring and Summer. We are lucky to live in Georgia, where we have an abundance of incredible fruits to enjoy! We are just starting the strawberry harvest and coming up, we’ll have blueberries, blackberries, raspberries, figs, peaches and more!

 

While straight out of the fridge is a delicious way to snack, take your fruit consumption to the next level by roasting your fruit! It’s an incredible way to bring out the natural sweetness and add some flair to any dish, like this week’s Strawberry Chicken Breasts.

 

We love keeping a little batch of roasted fruits in the fridge to top anything from chicken to Greek yogurt. You can even enjoy it in your oatmeal!

 

Roasting fruit is about as easy as it gets! Chop it up and toss it in a roasting pan with a little oil. Roast at 400 for 8-12 minutes and voila!

 

Get creative and experiment with flavors by adding balsamic, juice, wine or fresh herbs. A sprig of rosemary goes a long way in roasting!
