Arugula Pesto Recipe




We have a super easy pesto recipe for you to try out! Mix this in with pasta, thin it with extra olive oil and lemon juice to make a salad dressing, or serve it on top of sliced chicken breast. Have leftover pesto that you won't use this week? Freeze it in ice cube trays for later. The possibilities truly are endless!⁠


Ingredients:
  • 4 cups arugula⁠
  • 2 lemons, juiced⁠
  • 1/2 cup olive oil⁠
  • 1/3 cup parmesan⁠
  • 1/2 cup Georgia pecans⁠
  • salt & pepper to taste⁠
  • a pinch of red pepper flakes (optional)⁠


Trim any roots from greens and then combine all ingredients in a food processor or blender until paste forms. Voilà!⁠
