Name that Pasta: Battolli

When Mike Patrick, owner of Storcio Fresco, sends us a recipe for his handmade pasta I usually take to the internet to see what delicious creation he's cooked up. Mike studied all things pasta in Italy and has a wealth of knowledge on pastas most of us have never heard of. Each of them have a unique look, taste and history that makes them taste that much better.

This week, our menu features a Battolli Noodles with Spring Pesto and Heirloom Tomato Salad. Battolli is a flat noodle pasta that originated in Genoa, which is the capitol of Liguria. Storico Fresco's version is made with chickpeas, chestnuts and whole wheat. This pasta was specially designed to hold up to the flavors and textures of pesto.
