Blistered Shishito Peppers with Cilantro-Mint Aioli

This quick n' easy appetizer will be a crowd favorite! 


INGREDIENTS:

  • 8 oz shishito peppers
  • 1/3 cup mayonnaise
  • 1/2 cup fresh cilantro, minced
  • 1/2 cup fresh mint, minced
  • 2 garlic cloves, grated
  • 1–2 Tbsp lime juice
  • 1/2 Tbsp minced serrano
  • salt & pepper
  • oil


INSTRUCTIONS:

  1. Heat a sauté pan over med-high heat
  2. Once hot, add 1/2 Tbsp oil to the pan, then add shishitos
  3. Let cook for a3–4 min, then toss shishitos in the pan, and toss again after 2–3 min–repeat this a couple more times until there are charred and blistered spots on all of the shishitos
  4. Remove shishitos to a plate and top with a sprinkle of salt
  5. Make aioli by stirring mayonnaise, cilantro, mint, garlic, lime juice, and serrano in a small bowl until smooth, then add salt and pepper to taste
  6. Serve shishitos with cilantro-mint aioli on the side for dipping
