Blueberry Vinaigrette Recipe

A good dressing can really make a salad go from drab to delicious in no time! This blueberry vinaigrette is light with a touch of sweetness, and we're obsessed. It takes just a few minutes to throw together in a blender, but you could also shake the ingredients together in a tightly-lidded mason jar if you want to skip the blender. Toss some fresh local lettuce with your dressing, add some toasted pecans and sliced radishes, and voilà!

This recipe makes 4–6 servings.

 

YOU'LL NEED:

• 1 cup blueberries
• 2 Tbsp honey
• ¼ cup balsamic vinegar OR white vinegar
• 1 Tbsp lemon juice
• Pinch of salt and pepper
• ½ cup olive oil

 

INSTRUCTIONS:

  • Combine blueberries, honey, vinegar, lemon juice , salt, and pepper in a blender until fully incorporated
  • Keep the blender on and slowly pour in olive oil, let blend for about 30 seconds, until fully emulsified
