Charred BLT Toast

It's the best time of the year–tomato season! While we'll always be the tomato sandwich's biggest fans (seriously–this is the most common lunch you'll see at G&G during the summer), sometimes it's fun to switch it up. Give this charred BLT toast a try and we can guarantee you won't be disappointed.

INSTRUCTIONS:

PREHEAT OVEN & MAKE AIOLI

  • Preheat oven to 375ºF and arrange bacon on a baking sheet
  • Juice lemon
  • Add mayo, 1 Tbsp lemon juice & minced garlic to a small bowl and whisk to combine
  • Add salt & pepper to taste
  • Move bacon to the oven once it’s preheated and cook for 10–12 min 

PREP BREAD & TOMATO

  • Slice tomato
  • Melt butter in a sauté pan over med heat
  • Add bread to melted butter and toast for about 2 min, then flip and toast for 2 more min and remove from pan
  • Add tomato slices to pan, still over med heat
  • Let tomatoes cook for 1–2 min, until they start to char, then flip and let char for another 1–2 min and remove from pan

MAKE BACON VINAIGRETTE

  • Once bacon is cooked, remove from oven and blot with a paper towel to remove excess grease, then chop or crumble into small pieces
  • In a small bowl, whisk bacon with grainy mustard, 2 Tbsp lemon juice, garlic powder, and salt & pepper to taste

ASSEMBLE TOAST

  • Spread a generous dollop of garlic aioli onto the toasted bread, then layer on basil leaves & charred tomatoes and top with bacon vinaigrette. Enjoy!
