Chocolate Avocado Pudding

Surprise! This decadent-looking chocolate pudding is healthier than you think—it’s mostly avocado! Mixed with cocoa powder, maple syrup, vanilla & almond, you could trick your taste buds into thinking you’re enjoying the creamiest, most authentic chocolate pudding out there, completely avocado-free.
INGREDIENTS:
- 3 avocados
- ¾ cup whole milk
- 1/3 cup cocoa powder
- 1/3 cup maple syrup
- 1 ½ tsp almond extract
- 2 tsp vanilla extract
- ½ cup heavy cream
- 2 Tbsp powdered sugar
- ¼ tsp ground ginger
- 1 ½ tsp coarse sea salt
- 1/3 cup granola
INSTRUCTIONS:
1. PREPARE PUDDING
- Remove pit from avocados and scoop flesh into food processor or high speed blender and pulse until creamy
- Add milk, cocoa powder, maple syrup, almond extract & 1 ½ tsp vanilla extract, then blend until combined, scraping down sides as needed
2. MAKE WHIPPED CREAM
- In a bowl, beat heavy cream with a hand mixer until peaks form
- Add powdered sugar, ground ginger & remaining vanilla extract (½ tsp) and continue to beat until stiff
3. GARNISH & GATHER
- Scoop pudding into bowls, sprinkle with sea salt then top with whipped cream & granola
