Chocolate Hazelnut Energy Bites

 

 

We found it! Your new go-to recipe for snacking. It's delicious. It's healthy. It's perfect for both you and the kids. And it only takes 20 minutes in the kitchen to prep! 

 

20 min active; 40 min total; makes 15-20 energy bites

 

INGREDIENTS:

1 ½ cup dates

¼ cup whole pecans

½ cup hazelnuts

1 ½ Tbsp cocoa powder

1 ½ Tbsp peanut butter

1 ½ Tbsp maple syrup

½ tsp vanilla extract

¼ tsp salt

3 Tbsp mini chocolate chips

3 Tbsp chopped pecans

1/3 cup sweetened flaked coconut

 

 

INSTRUCTIONS:

1. COMBINE INGREDIENTS

  • In a food processor, combine dates, whole pecans & hazelnuts until finely ground 
  • Add cocoa powder, peanut butter, maple syrup, vanilla & salt then process until it comes together
  • Transfer to a bowl then fold in mini chocolate chips & chopped pecans

 

2. ROLL INTO BITES

  • Roll into ping-pong sized balls, then roll in shredded coconut
  • Place on a plate or a sheet pan & transfer to the fridge 15-20 min, until cool & hard
  • Energy bites can also be rolled in cocoa powder, flaked sea salt or sesame seeds for a little variation!
