Emily's Gingersnap & Whipped Cream Cake Recipe

Our founder Emily's favorite holiday tradition is making the gingersnap & whipped cream cake that she's served her family on Christmas ever since she was a little girl. It's a quick & easy recipe that kids will have fun making, so we wanted to share it with you!

You need:

1 pint heavy whipping cream

2 t powdered sugar

1 t vanilla

orange zest, optional

1 T bourbon, optional

20 to 30 ginger snaps

 

 

Make whipped cream:

Beating cream until foamy. Add in powdered sugar and continue beating until stiff peaks form. Carefully fold in vanilla, bourbon & orange zest. 

 

Make the cake:

Cover a circular plate or cake platter with one layer of gingersnaps & then cover with a layer of whipped cream. Arrange another layer of gingersnaps over top, followed by whipped cream. Repeat for 5 to 7 layers (or to desired height), with each layer of gingersnaps in a slightly smaller circle than the one before. Serve & enjoy!
