French Toast Casserole

The simple yet delicious breakfast recipe that’s perfect for when company’s in town.
15 min active; 50 min total; serves 4—6
INGREDIENTS:
- 6 slices bacon
- half loaf of Challah bread
- 3 eggs
- 1 1/2 cups half & half
- 2 Tbsp brown sugar
- 1/2 tsp cinnamon
- 1/2 tsp cardamom
- 1/4 tsp nutmeg
- 1 tsp vanilla
- 4 Tbsp butter
- 1/4 cup chopped pecans
- 2 Tbsp flour
- 1/4 cup oats
- 2 Tbsp maple sugar
- 4 oz shredded cheese
- 1/3 cup maple syrup
INSTRUCTIONS:
1. PREHEAT OVEN & COOK BACON
- Preheat oven to 400°F
- Heat a large sauté pan over med, cook bacon 5—8 min per side, until crisp
2. PREP FRENCH TOAST
- Roughly chop bread
- In a casserole dish, whisk together eggs, half & half, brown sugar, cinnamon, cardamom, nutmeg & vanilla until well combined
- Add bread and toss until liquid is mostly absorbed, then set aside
3. PREP CRUMBLE
- Melt butter
- Mix pecans, flour, oats & maple sugar in a bowl, then add melted butter and stir to combine
4. ASSEMBLE CASSEROLE
- Chop bacon
- Add bacon to bread in casserole dish, then add cheese and toss to combine
- Top with crumble mixture
- Bake 30—40 min, until golden brown on top
5. GARNISH & GATHER
- Scoop French toast casserole onto plate then garnish with a drizzle of maple syrup and enjoy!
