Homemade Queso & Tortilla Chips

It's the best day of the year... National Queso Day! What better way to celebrate than with homemade queso and tortilla chips? We've got you covered. Here's our favorite recipe!

25 min, serves 4-6

 

 

INGREDIENTS:

5 (6-inch) corn tortillas

1 oz Red Pepper Mash Banner Butter

1 Tbsp salted butter

1/3 cup diced white onion

1 Tbsp minced garlic

1 jalapeño

6 oz melting cheese, shredded

2 oz Pepper Jack, shredded

1/3 cup whole milk

2/3 cup cherry tomatoes

2 Tbsp chopped cilantro

salt & pepper

olive oil

 

 

INSTRUCTIONS:

 

1. MAKE CHIPS

  • Preheat oven to 350°F
  • Stack tortillas & cut into 8 triangles (like a pizza)
  • Melt Banner Butter in microwave
  • On a baking sheet, toss chips with melted butter & spread into a single layer
  • Sprinkle with salt then bake 13-16 min, flipping halfway, until crisp & golden

 

2. PREP QUESO

  • Remove seeds & finely chop half of jalapeño (save the other half for another use, or chop and add to your queso for more heat)
  • Chop cilantro
  • Chop cherry tomatoes

 

3. MAKE QUESO

  • Heat salted butter in a skillet pan over med heat
  • Add diced onion to pan and cook 5 min
  • Add garlic & jalapeño and cook 1 min, until fragrant
  • Turn heat down to low and add cheeses & milk slowly, stirring constantly until cheese is melted
  • Season with salt & pepper to taste
  • Stir in tomatoes & cilantro
