How to Make Strawberry Agua Fresca

Agua Frescas are the Mexican beverage of summer. They can be made with a virtually unlimited number of ingredients. Simply put, they are fruit infused water, and are enjoyed to refresh and hydrate in a healthy and delicious way. We like to keep it simple for the sake of easy preparation and to let the individual ingredients shine. Strawberries are abundant and beautiful now, so don’t just eat them, drink them! This is also a great recipe to use if your strawberries are a few days old and starting to look a little tired.

Ingredients:

  • 1 Pint strawberries
  • 4 ounces sugar
  • 2 Limes
  • 2 Quarts water

Directions:

  1. Clean and de-stem the strawberries and cut them in half.
  2. Place in container and cover with sugar, stirring well to coat all the berries.
  3. Let them macerate for a few hours or overnight, stirring occasionally.
  4. Once the Strawberries have surrendered their syrup, place in blender, add the fresh lime juice from both limes & 2 quarts water then blend.
  5. Chinois or strain through a cheese cloth, and pour over ice.

Yield 2.5 quarts. Add a lime wedge or sprig of mint for optional garnish.
