How to Ribbon a Zucchini

A vegetable can be transformed simply by cutting it in a different style than you’re used to. The latest trend is turning your favorite veggies into noodle-like ribbons, like in this week's pasta meal. But how do you get perfect ribbons?

 

Of course, a spiralizer or mandolin slicer make zucchini ribbons a no brainer. If you don’t have one of those lying around? No problem! Simply bust out your veggie peeler. 

 

First, peel the skin off and discard. Once you get to the flesh, start peeling long strands on one side. Once that side gets too wide for your peeler, rotate the zucchini and continue to peel. 

 

If your goal is thin noodles, place the slices on top of each other on a cutting board and use a sharp knife to slice them thinner.
