Meet Chef Axel Torres of Brasserie Margot!



1. Tell us about Brasserie Margot! What is the food and atmosphere like and where is it located?

 

Brasserie Margot is our modern French brasserie located inside the Four Seasons Hotel Atlanta in Midtown. The concept blends classic French technique with regional American influences. You’ll find dishes that feel both comforting and refined, beautifully roasted proteins, seasonal vegetables, elevated sauces, and thoughtful touches inspired by Georgia ingredients.

 

The atmosphere is warm, lively, and elegant without being stiff. It’s a place for celebrations, business lunches, date nights, or simply enjoying a great glass of wine and a well executed meal. Our goal is to make every guest feel welcome while delivering food that reflects craftsmanship, seasonality, and heart.


 

2. How did you first step into the culinary world? Did you always know you wanted to be a chef?

 

I didn’t grow up saying, “I’m going to be a chef,” but I did grow up around food, family, and culture where cooking meant connection. My real entry into the culinary world started when I realized that food could be both creative and disciplined, art and structure at the same time.

Once I stepped into professional kitchens, I was hooked. The pressure, teamwork, long hours, and constant pursuit of excellence felt like home. Over time, it became clear this wasn’t just a job…it was a calling. Every stage of my career, from cook to Executive Chef, has shaped my leadership, my values, and how I approach food today.




 

3. What would you be doing if you weren’t a chef?

 

If I wasn’t a chef, I would have likely become a lawyer. I’ve always been drawn to structure, discipline, and advocacy, standing up for people, building strong cases, and leading with integrity.

Even in the kitchen, that mindset shows up: I protect my team, I fight for quality, and I lead with responsibility. Cooking just became the path where all of that came together.



4. Can you give us your number one piece of advice for home cooks?

 

Respect your ingredients and keep it simple. You don’t need complicated techniques or long ingredient lists to make great food. Start with good products, season properly, taste as you go, and cook with intention.

Cooking should be joyful, not stressful. Trust your instincts, learn from mistakes, and remember, food is about bringing people together, not perfection.






5. What are a few of your favorite places to hang out or eat in Atlanta?

 

Atlanta has an amazing food scene, and I love exploring different cultures through food. In my 9 months now in Atlanta, some of my favorites include:

 

  • Nobu Atlanta for elevated Japanese cuisine and a great dining experience (I was a regular of Nobu, in Vail Colorado, where I previously come from).
  • Thai spots around the city- I love bold flavors, spice, and balance in Thai cooking.
  • Colombian restaurants and bakeries, because those flavors connect me deeply to culture, my wife’s family, and comfort.
  • Exploring local neighborhood gems that tell real stories through food.
