Local pasta maker, Pasta Mami has been open for several decades and they make the most delicious pastas! Located in Marietta, they make several types of fresh pasta without preservatives like sweet potato gnocchi, spinach linguine and so much more. Your company has been around since 1987. How did it get started?
The company was started by Mark and Hilda Portwood. They met as chefs working in the local Atlanta dining scene and wanted to start their own business. So, they took their love of pasta and each other and created Pasta Mami.
Do you have any seasonal pastas coming out soon?
The fall season brings so much demand for all the squashes! Our most popular being the roasted butternut squash ravioli. We tend to see a lot more requests for braised beef and smoked chicken ravioli around this time too. There's also an uptick in gnocchi; potato, sweet potato and even acorn squash gnocchi.
What is your favorite pasta dish?
This is always such a hard one to answer, it's like picking your favorite child! It really depends on the mood and the day. I would say our go to's are always cheese tortellini, spaghetti, lasagna, and of course mac n cheese (which we love to make with rigatone). But when we're working, and there's extra time, we love to fry any of the cheese ravioli we've been making that day, our favorite is the two cheese or mascarpone. We even have some customers that fry our goat cheese apple ravioli and eat it with ice cream!
How many different types of pasta do you make?
There is no limit! But jokes aside we probably have 400 different pasta items on our register. About 150 of those are on regular rotation.
Is there one you like making the most? One that’s most difficult?
The answer to this is probably the same for both questions. Our handmade tortelloni and sacchettini are probably the most difficult to learn, but once you've mastered the skill these are so fun to make.
What does eating locally mean to you?
Definitely supporting the local restaurants, grocers like Garnish & Gather, and local farmers market. We believe in supporting the community that supports you. We personally love Garnishes meat and seafood bundles! The quality is always amazing, and it feels good knowing that it comes from local farmers and fishers.
What is your favorite dinner spot in Atlanta?
Gosh, another hard question! Since we're more central to Marietta Square, we love going to Mac's Chop House or Mac's Raw Bar. They're actually opening up an Italian restaurant soon, so we're really excited about that! Thaicoon, in the square, and Taqueria Tsunami are always places we go to for birthday celebrations! In my Atlanta frequenting days Victory was my favorite spot.
