One Pan Pesto Chicken

Some nights you just need an easy one-pan go-to. Bonus: this one happens to be delicious! 

 

YOU'LL NEED:

INSTRUCTIONS: 

  • Preheat oven to 425ºF
  • Chop broccoli into florets, Chop onion into large chunks, and halve radishes
  • In a bowl, toss broccoli, onion & radishes with 2 Tbsp olive oil, salt, pepper & garlic powder
  • Spread veggies onto a sheet pan then bake for 8 min (veggies will finish cooking with chicken)
  • Pat chicken dry and season with salt & pepper, then coat with pesto
  • After 8 min of baking, toss veggies and nestle chicken among them on the pan, then bake another 16–20 min, until chicken is done and veggies are tender
  • Pick thyme from stems
  • Divide chicken, veggies & any pan juices among plates, then add a squeeze of lemon on top and garnish with fresh thyme
