Pasta Mami's Fresh Red Sauce

Who knows pasta sauce better than those who hand-make pasta? That's right—no one. Our friends at Pasta Mami sure know how to do it right! And right in the middle of peak tomato season, this light and easy family recipe highlights the bright taste of fresh tomatoes, and bonus points! It's easy. This recipe also doubles as a tomato-forward dressing for a summer salad. Oh, the possibilities!

This recipe makes 3—4 servings.

 

INGREDIENTS:

  • 1 lb tomatoes
  • 1/4 cup fresh basil
  • 2 Tbsp fresh parsley
  • 2 cloves garlic
  • 3 slices bacon
  • 1/4 cup pecorino romano or parmesan cheese
  • 2 Tbsp olive oil
  • 1 lb tagliatelle pasta
  • salt & pepper

 

 

INSTRUCTIONS:

  • Bring a pot of salted water to a boil
  • Roughly dice tomatoes and add to a large bowl with all juices
  • Chop basil & parsley and add to tomatoes
  • Mince garlic and dice bacon
  • Sear garlic & bacon in a pan over med heat and render to your liking, about 4 min
  • Remove from heat and add to bowl with tomatoes, then add cheese, olive oil, and salt & pepper to taste
  • Add linguine to boiling water and cook 2—3 min, or until al dente, then drain (don’t rinse!) and mix into pasta sauce
