Peach Agrodolce Recipe

Agrodolce (pictured above atop a redfish fillet) is a sweet & sour sauce that traces its roots back to traditional Italian cooking. Its name explains it all--"agro" means sour and "dolce" means sweet! Here's our favorite agrodolce recipe, featuring none other than Georgia's favorite summer fruit... peaches! This condiment goes great on meats, add a special touch to sandwiches, and can jazz up just about any roasted vegetable.

 

INGREDIENTS:

  • 8 oz spring onions
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp brown sugar
  • 1/2 tsp fennel seed
  • 1/4 tsp ground clove
  • peaches

 

INSTRUCTIONS:

  • Trim very bottom root from spring onions and slice bulb into 1/4”-thick slices, then chop green parts into 1” pieces
  • In a sauté pan, heat 1 Tbsp oil over med heat
  • Add spring onion and cook 5 min
  • Dice peach into 1/2” pieces
  • To pan, add cider vinegar, brown sugar, fennel, clove, peach & salt to taste, reduce heat to low, cover, and cook 13—15 min, until onions are very soft
  • Top fish, potatoes, steak, or even rice with your agrodolce, and enjoy!
