Peach & Avocado Guacamole

This guacamole is perfect for sharing...or for eating all on your own because it's just do delicious. Brush triangles of corn tortillas with melted butter & red pepper flakes, then bake for crispy Southern-style chips with just the right amount of kick. Mix together creamy avocados, lime & cherry tomatoes to make your guac, then top with a tasty relish made with fresh peaches & jalapeño.
20 min active; 25 min total; serves 4–6
YOU'LL NEED:
- (5) 6” corn tortillas
- 1 oz salted butter
- 1/4 tsp ground red pepper
- 1 peach
- 1 jalapeño
- 2 limes
- 1/3 cup diced red onion
- 2/3 cup cherry tomatoes
- 1/3 cup cilantro
- 2 avocados
- salt & pepper
INSTRUCTIONS:
1. MAKE CHIPS
- Preheat oven to 350ºF
- Stack tortillas and cut into 8 triangles (like a pizza)
- Place butter & ground red pepper in a bowl, then microwave until melted
- On a baking sheet, toss chips with melted butter and spread into a single layer
- Sprinkle with salt then bake 13–16 min, flipping halfway through, until crisp and golden
2. PREP RELISH
- Remove pit and small dice peach
- Remove seeds and finely chop half of jalapeño (use 1/4 of jalapeño for less heat)
- Juice limes
- Combine peach, jalapeño & HALF of red onion with HALF of lime juice, and salt & pepper to taste, then set aside
3. MAKE GUACAMOLE
- Dice cherry tomatoes
- Chop cilantro
- Cut each avocado in half, remove seed, then scoop out flesh into a large bowl and smash
- Add remaining lime juice, remaining red onion, tomatoes, HALF of cilantro & salt to taste, then stir to combine
4. GARNISH & GATHER
- Scoop guacamole into a serving bowl then top with peach relish & remaining cilantro
- Serve with red pepper tortilla chips for dipping, and enjoy!
