Persimmon & Bacon Pizza


Fall means persimmon season! But what do you do with this pretty orange fruit? We like to put it on this Persimmon and Bacon Pizza with red onion, shredded cheddar & sweet chili sauce. Give the recipe a go and let us know how you like it!




You'll need:





1. SET OUT DOUGH & PREHEAT OVEN


  • Remove dough from refrigerator, remove wrap, and let it sit on counter to rise
  • Preheat oven as hot as it goes (~500-550ºF)
  • Heat a pan over high heat, then add bacon and cook 2–3 min, until just crisp, and remove from pan to a paper towel-lined plate
  • Peel and thinly slice persimmon 


2. STRETCH PIZZA DOUGH


  • Place 1 ball of dough onto 1 piece of parchment paper and cover with another piece of parchment paper
  • Flatten dough to 1/8 inch thick
  • OPTION 1: Use a rolling pin or anything cylindrical (like a wine bottle)
  • OPTION 2: Use the side of hands (pinky to wrist) to apply pressure and drag along parchment paper to flatten dough
  • Remove top piece of parchment paper and transfer pizza dough (still on top of parchment paper) to a baking sheet
  • Repeat with other dough to make two pizzas


3. TOP & BAKE PIZZA


  • Divide 1 Tbsp olive oil between pizzas
  • Divide chili garlic sauce between pizzas
  • Crumble bacon
  • Divide bacon, red onion, and persimmon between pizzas and top with cheddar
  • Sprinkle salt & pepper over each pizza
  • Bake in oven for 7-12 min, or until desired crispiness
