Popcorn Shrimp Recipe

We love eating this addicting, oven-baked popcorn shrimp recipe as a shareable appetizer or as part of family-style dinner! Coat your shrimp in a panko & parmesan mixture then bake 'til golden and crispy and serve with a cool, creamy cumin-lime dipping sauce.

20 min active; 25 min total; serves 4-6

 

INGREDIENTS:

  • 1 lb peeled and deveined shrimp
  • 1 cup panko
  • 1/3 cup parmesan
  • 1/2 cup flour
  • 2 eggs
  • 1 lime
  • 2 tsp coriander
  • 2 tsp garlic
  • 3/4 cup mayo
  • salt & pepper
  • oil 

 

INSTRUCTIONS: 

1. PREHEAT OVEN & PREP SHRIMP

  • Preheat oven to 400°F
  • Cut each shrimp in half lengthwise across the back
  • Pat shrimp dry with a paper towel and sprinkle with salt & pepper
  • Empty flour into a shallow dish & add 1/4 tsp salt & 1/4 tsp pepper
  • In a bowl, lightly whisk eggs
  • Empty panko & parmesan into another shallow dish and mix to combine
  • Grease baking sheet
  • Working in an assembly line, toss shrimp in flour, then egg, then dip in panko mixture, then transfer to prepared baking sheet and bake 6—8 min, until golden

 

2. MAKE DIPPING SAUCE

  • Zest and juice lime
  • In a bowl, whisk together lime juice, lime zest, coriander, garlic & mayo until combined
  • Add salt & pepper to taste 

 

3. GARNISH & GATHER

  • Enjoy popcorn shrimp dipped in sauce and serve with you favorite slaw!
