Recipe for Caesar Salad with Parmesan Crisps

Our go-to salad: Homemade Caesar with Parmesan Crisps. It's simple, easy, and oh so elegant. Parmesan crisps add an extra-special touch to any salad, and can be toppings for soup, too! 

 

INGREDIENTS:

1/3 cup parmesan

¼ tsp garlic powder

1 lemon

4 cups lettuce

1 Tbsp Dijon mustard

½ tsp anchovy paste

½ tsp minced garlic

3 Tbsp olive oil

½ cup shredded carrot

salt & pepper

 

 

INSTRUCTIONS:

MAKE PARMESAN CRISPS

• Preheat oven to 400°F

• On a baking sheet, use a 1 Tbsp measurement to make 4 piles of parmesan, and pat circle evenly to about 3”, reserving the rest of the parmesan for dressing

• Sprinkle cheese with garlic powder & ¼ tsp pepper

• Bake 6-8 min, until light golden, then let cool

 

MAKE DRESSING

• Juice half of lemon & cut other half into wedges for garnish

• Roughly chop lettuce

• In a large bowl, whisk together lemon juice, Dijon, anchovy paste, garlic, remaining parmesan cheese, olive oil, and salt & pepper to taste

 

PLATE & ENJOY!

• Add lettuce & carrot to dressing, tossing to coat

• Serve salad topped with parmesan crisps
