Sausage & White Bean Soup

This healthy, flavorful soup makes escarole a star! Simmer together slices of Italian sausage, escarole, white beans, carrots & aromatics with a splash of white wine. Top it off with a spoonful of gremolata made with parmesan, parsley, oregano & garlic.

INGREDIENTS:

  • 2 links Italian sausage
  • 2 cups escarole
  • 1 1/2 cup white beans
  • 1/2 cup diced carrot
  • 1/4 cup diced onion
  • 2 tsp + 1/2 tsp minced garlic
  • 1/4 cup white wine
  • 3 cups chicken broth
  • 1/3 cup parsley
  • 2 Tbsp oregano
  • 2 Tbsp parmesan
  • 1/8 tsp red pepper flakes
  • olive oil
  • salt & pepper

 

 

INSTRUCTIONS:

1. BROWN SAUSAGE & PREP GREENS

  • In a large pot, heat 1 Tbsp oil over med
  • Add sausage and brown 3-4 min per side
  • Roughly chop escarole 
  • Drain and rinse beans

 

2. START SOUP

  • Remove sausage from pot, then add carrot, onion, and 2 tsp garlic, salt & pepper, and cook 2–3 min
  • Add white wine and cook 1–2 min, scraping up any browned bits
  • Slice sausage into coins
  • Add chicken broth and bring to a boil, then reduce heat to med-low
  • Add escarole, beans & sausage (and any juices from the plate) and cook 10 min

 

3. MAKE GREMOLATA

  • Finely chop parsley & oregano
  • Combine herbs with 1/4 cup olive oil, remaining 1/2 tsp garlic, red pepper flakes & parmesan
  • Adjust gremolata seasoning to taste

 

4. GARNISH & GATHER

  • Scoop soup into bowls, drizzle with gremolata, and enjoy!
