Shaved Squash Salad Recipe

This gorgeous salad perfectly highlights one of the best parts of summer: squash! It's light, refreshing, and can be served on its own, or as a side. How versatile! The hint of mint is what really makes it. We can guarantee this recipe will be a hit at your next gathering.

15 min; serves 2 as a light meal or 4–5 as a side

 

INGREDIENTS:

  • 3 Tbsp pecans
  • 2 Tbsp mint leaves
  • 1/3 cup goat cheese
  • 3 Tbsp olive oil
  • 1 tsp lemon zest
  • 2 Tbsp lemon juice
  • 1 tsp honey
  • 1/2 tsp red pepper flakes
  • 1 lb summer squash (a mix of yellow squash & green zucchini is prettiest!)
  • salt & pepper

 

INSTRUCTIONS:

1. PREP TOPPINGS

  • Heat a sauté pan over med heat, then add pecans
  • Watch closely and toss every 30 sec until starting to brown, then remove from pan and roughly chop
  • Chop mint leaves
  • Crumble goat cheese

2. MAKE VINAIGRETTE

  • Mix olive oil, lemon zest, lemon juice, honey & red pepper flakes in a large bowl, then add salt & pepper to taste

3. ASSEMBLE SALAD & SERVE

  • Using a vegetable peeler or a mandoline, thinly shave squash
  • Add squash to bowl with vinaigrette and toss gently, then top with pecans, mint & goat cheese, and enjoy!
