Strawberry Baked Oatmeal

This flavor-packed, creamy baked oatmeal recipe is anything but boring! We can pretty much guarantee that it will change the way you look at this nutritious breakfast staple. Add toasted almonds & antioxidant-rich chia seeds to cinnamon-spiced rolled oats, sweeten with honey & fresh strawberries then bake to warm, fragrant goodness. Enjoy warm with a drizzle of honey & cream, or it's great chilled and cut into squares for an easy on-the-go snack!
15 min active; 1 hour total; serves 4–6
YOU’LL NEED:
- 3 oz butter
- 1/3 cup sliced almonds
- 1 1/4 cup strawberries
- 2 cups old fashioned oats
- 1/4 cup chia seeds
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 2 cups milk
- 1 egg
- 1/4 cup + 2 Tbsp honey
- 1 tsp vanilla extract
- 1/3 cup heavy cream
- 8” square baking dish
INSTRUCTIONS:
1. PREP INGREDIENTS
- Heat oven to 350°F
- Grease baking dish with a little of the butter (about 1/2 Tbsp)
- In a sauté pan, toast almonds over med heat, until fragrant, about 2–4 min, stirring often
- Slice strawberries
2. BAKE OATMEAL
- In a large bowl, stir together oats, chia seeds, baking powder, cinnamon, salt & HALF of almonds
- Melt the remaining butter
- In another bowl, whisk together milk, egg, 1/4 cup honey, vanilla extract & melted butter
- Add milk mixture to oat mixture, tossing well to soak all the oats
- Stir in strawberries
- Pour into greased pan and top with remaining sliced almonds
- Bake 35–45 min or until edges are golden brown and center is set
3. GARNISH & GATHER
- Serve oatmeal warm with a few Tbsp of heavy cream poured over top and a drizzle of remaining honey
- Alternatively, skip the cream and enjoy chilled; cut into squares or slices to take on the go
