Where is your farm located and how long have you been established?
The farm is located at 1960 Brasstown Rd., Brasstown, NC. The farm was established at this location in 1954 by my father, EJ Whitmire.
What makes your beef and farm stand out from the rest?
We believe the superior flavor and tenderness results from a number of things. First of all is selecting cattle with the right genetics. Second is that they are growing at a natural pace because we use no growth promoting hormones and they are never in confinement. The cows are free to walk around in pastures either grazing on grass during the 9-month grass growing season or eating hay when grass goes semi dormant in the winter.We saw on your social media that your cows are fed cow kimchi along with grass. Can you tell us more about cow kimchi? We are very intrigued!
We also mix a very nutritious feed for them each day that they can wander in and eat at their leisure. The primary component of this feed is “cow kimchi” which is the whole immature corn plant that is chopped while it’s still green and the corn kernels are milky. We chop it in the field, bring it to our silage pit and pack really tight and then cover it with an airtight plastic wrap. Since this concoction is 65% moisture, it goes through a heat and fermentation process which not only releases micronutrients but also preserves it.This is then mixed with a cinnamon and garlic and mineral supplement, including probiotics, and dried distillers grain. The recipe we use is designed by an animal nutritionist.
We are most of all concerned about having perfect nutrition which results in practically no illness in our cattle, even though we don’t use any antibiotics.
