3 Easy Back-To-School Dinners

Getting back in the swing of things can be tough... but G&G is here to help! Meal kits are perfect for any night of the week (you won’t even have to think twice!) and having groceries delivered is always a time-saver, but we’ve also rounded up 3 of our favorite kid-friendly, quick-and-easy recipes that will make dinner a breeze!

 

THAI COCONUT CHICKEN KEBABS

25 min active, 35 min total; serves 4

 

Ingredients:

16 wooden skewers

2 Tbsp brown sugar

1 Tbsp curry powder

1 ½ tsp cumin

1 ½ tsp coriander

¼ tsp cayenne

3 Tbsp tamari

½ tsp ground ginger

½ cup coconut milk

24 oz chicken breasts, cut into 2” cubes

1 large zucchini, cut into 1” half moons

1 small onion, cut into large pieces

2 cups mushrooms, halved

2 limes

1 Tbsp ginger paste

2 tsp fish sauce

1 tsp rice vinegar

olive oil

salt & pepper

 

Instructions:

1. PREHEAT OVEN & PREP KEBABS

  • Soak wooden skewers in water until ready to use
  • Preheat oven to 450°F
  • In a bowl, combine brown sugar, curry powder, cumin, coriander,    cayenne, tamari & ground ginger with coconut milk 
  • Season cubed chicken with salt & pepper
  • Add chicken to marinade then set aside
  • Toss zucchini, onion & mushrooms with 2 Tbsp oil, salt & pepper

2. COOK SKEWERS & MAKE DIPPING SAUCE

  • Alternate veggies & chicken on skewers & place on baking sheet lined with foil, pouring remaining marinade over top
  • Bake kebabs for 14-16 minutes, until chicken is cooked through
  • Juice limes
  • Combine lime juice, ginger paste, fish sauce & rice vinegar

3. PLATE MEAL & ENJOY

  • Enjoy kebabs with ginger-lime dipping sauce on the side
  • Serve over rice if desired.

 

 

 

 

 

ENGLISH MUFFIN PIZZAS

10 min active, 25 min total; serves 4 

 

Ingredients:

4 English muffins

1/3 cup tomato paste

¼ tsp dried thyme 

½ tsp dried basil

½ tsp sugar

½ cup shredded mozzarella

½ cup ricotta

4 Tbsp parmesan

1/3 lb pepperoni

2 Tbsp fresh oregano

olive oil

salt & pepper

 


Instructions:

1. PREHEAT OVEN & PREP MUFFINS

  • Preheat oven to 400°F
  • Cut English muffins in half, rub both sides with olive oil then place cut-side up on a sheet pan

2. BUILD PIZZAS

  • Chop oregano
  • Combine oregano & ricotta
  • Stir tomato paste, thyme, basil & sugar
  • Spoon sauce onto each English muffin then top with ricotta,     mozzarella & pepperoni
  • Sprinkle with half of parmesan
  • Bake 10-12 min, until cheese is melted & English muffin is golden
  • Season to taste with salt & pepper 

3. PLATE & ENJOY

  • Enjoy pizzas sprinkled with remaining parmesan

 

 

 

 

 

SOUTHWESTERN BRISKET SLIDERS

20 min active, 20 min total; serves 4

 

 

Ingredients:

 

1 lb pulled smoked brisket

1/3 cup tomato paste

2 Tbsp chipotle chile

1 Tbsp smoked paprika

2 tsp cumin

1 tsp coriander

1 tsp oregano

8 sesame slider buns

2 cups sweet peppers, sliced

¼ cup chopped cilantro

2 limes, juiced

2 Tbsp sour cream

¼ cup mayo

½ tsp cumin

½ tsp sugar

1/3 cup crumbled queso fresco

4 cups slaw mix (shredded cabbage & carrot)

½ cup Doux South’s red pepper relish

olive oil

salt & pepper

 

Instructions:

 

1. WARM BRISKET

  • Preheat oven to 350°F for the buns
  • Heat a sauté pan over med-low
  • Roughly chop brisket
  • Add brisket, tomato paste, chipotle chile, smoked paprika, cumin, coriander, oregano, ½ cup water, salt & pepper to pan, then stir to combine
  • Simmer 4-6 min until brisket is warmed through, then set aside

2. WARM BUNS & MAKE SLAW

  • Slice buns in half & top with butter & toast in the oven for 3-4 min until golden
  • In a bowl, whisk together sour cream, mayo, cumin, sugar, lime juice, queso fresco, salt & pepper
  • Add slaw mix, peppers & cilantro to dressing, then toss to coat and adjust seasoning to taste

3. PLATE MEAL & ENJOY

  • Spread red pepper relish onto buns & then scoop brisket on top
  • Enjoy slaw on the side
