3 Foil Packet Recipes

It's the time of year to be eating (and cooking) outside! Whether you're grilling in the backyard or on a camping trip in the mountains, these three foil packets recipes are sure to be a hit. For each recipe, you'll place ingredients in a sheet of tin foil, fold the sheet in half, then fold the edges inward towards the shrimp or veggies, pushing down to seal the edge as you go. (It's easy, we promise!)
Each recipe serves 4.
ROASTED BASIL SQUASH
- 2 to 3 med summer squash
- 1/4 cup butter, melted
- 1/4 cup grated parmesan
- 1 Tbsp fresh basil, chopped
- 1 Tbsp fresh oregano, chopped
- salt & pepper
1. PREP SQUASH & MAKE MARINADE
- Slice squash into 1/4-inch rounds
- Whisk together butter, parmesan, basil, oregano, and salt & pepper to taste
2. COOK SQUASH
- Place squash in a large sheet of tin foil, then pour butter mixture on top and seal foil packet
- Place foil packet on the grill or over campfire cooking grate and cook for 15—20 min at high heat
GARLIC PARMESAN POTATOES
- 2 lbs red potatoes
- 2 Tbsp olive oil
- 1/2 cup grated parmesan, plus more for garnish
- 3 Tbsp minced garlic
- 1 1/2 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp dried basil
- 1/2 tsp dried rosemary
- salt & pepper
- 2 Tbsp chopped fresh parsley for garnish
1. PREP POTATOES
- Cut potatoes into about 1-inch pieces
- In a bowl, toss potatoes with olive oil, parmesan, garlic, all dried herbs, and salt & pepper to taste
- Place seasoned potatoes onto a sheet of tin foil and seal packet
2. COOK POTATOES
- Place foil packet on the grill or over campfire cooking grate and cook for 20—30 min at med-high heat
- Garnish cooked potatoes with parmesan & parsley
LEMON-GARLIC SHRIMP
- 1 lb raw shrimp, peeled & deveined
- 4 Tbsp Roasted Garlic Banner Butter, melted
- 2 large garlic cloves, minced
- 1 Tbsp lemon juice
- 1 Tbsp chopped fresh parsley
- 1/4 tsp red pepper flakes
- salt & pepper
- 1 tsp lemon zest
1. PREP SHRIMP
- Place shrimp in a large sheet of tin foil, then add butter, garlic, lemon juice, parsley, red pepper flakes, and salt & pepper to taste
- Fold sides to seal packet
2. COOK SHRIMP
- Place foil packet on the grill or over campfire cooking grate and cook for 8—10 min at med-high heat, then flip the foil packet and continue cooking until shrimp are pink and cooked through, about 3—5 min
- Garnish with lemon zest
