3 Ways to Use Strawberries

It's strawberry season, but it won't last long! Soak up some strawberry goodness while you can with these 3 versatile recipes. 

 

STRAWBERRY-JALAPENO SALSA

  • 2 cups strawberries, diced
  • Juice of 2 limes
  • 1/2 cup cilantro, chopped
  • 2 green onions, thinly sliced
  • 1 Tbsp honey
  • 1 jalapeño, seeded and diced
  • Salt & pepper

In a bowl, combine all ingredients and add salt & pepper to taste. Goes great as a topping for roasted chicken or on a taco with pulled pork and feta.

makes 4 servings

 

 

 

STRAWBERRY-BALSAMIC GLAZE

  • 1 Tbsp oil
  • 1 1/2 cups strawberries, diced
  • 2 tsp garlic, minced
  • 2 Tbsp sugar
  • 1/4 cup balsamic vinegar
  • 1 tsp Dijon mustard
  • Salt & pepper

Heat oil in a sauté pan over med, then add strawberries & garlic and cook 2-3 min, stirring occasionally.

Add sugar, balsamic, mustard, and salt & pepper to taste, then stir to combine and cook over low for 2-3 min, until slightly thickened, adding 1 Tbsp of water at a time if it gets too thick.

Pour on top of steak or pork chops, or leave out the garlic & mustard and use it as an ice cream topping.

CHIPOTLE STRAWBERRY SAUCE

  • 1 Tbsp oil
  • 2/3 cup tomato sauce
  • 2 Tbsp chipotle in adobo sauce
  • 1/4 cup brown sugar
  • 2 Tbsp balsamic vinegar
  • 2 tsp Worcestershire
  • 2 tsp Dijon mustard
  • 2 tsp garlic, minced
  • 2 cups strawberries, diced

Heat oil in a sauté pan over med-high, then add all ingredients.

Reduce heat to low, cover and cook 5-8 min until thickened, smashing strawberries with the back of a spoon. Add water, 1 Tbsp at a time, if sauce gets too thick.

Think of this as a bbq sauce. Add to roasted meat, baked beans, or pour over grits and pulled chicken.
