Apple-Cheddar Sausage & Egg in a Hole

This easy brunch recipe will be your new Saturday morning go-to! Form ground sausage into breakfast patties with cheddar cheese, fragrant sage & apples. Then, make your egg in a hole using thick slices of challah with an egg cracked into the center. To finish it off, simmer maple syrup & cider vinegar for a delectable sauce to drizzle over everything!

YOU'LL NEED:
- 1 apple
- 2 tsp fresh sage
- 2 oz white cheddar cheese
- 2 green onions
- 10 oz mild Italian pork sausage
- 2 slices TGM challah bread
- 2 eggs
- 1/4 cup maple syrup
- 1 1/2 Tbsp apple cider vinegar
- salt & pepper
- cooking oil
INSTRUCTIONS:
1. PREP SAUSAGE PATTIES
- Small dice apple into 1/8” pieces, using about 1/2 cup apple (enjoy snacking on any remaining apple!)
- Chop sage
- Shred cheese
- Thinly slice white part of green onion and chop green tops, keeping separate
- Heat 1 tsp oil in sauté pan over med-high
- Add apple & white part of onion and sauté 3 min, then transfer to a bowl
2. COOK SAUSAGE PATTIES
- In the bowl, combine cooked apple mixture, sausage, cheese & sage until well mixed, then form into 4 patties about 1/2” thick
- In the same pan used for apples, heat 1 tsp oil over med
- Add patties and cook 3—5 min per side, until cooked through, then remove from pan, reserving drippings in the pan
3. MAKE EGG IN A HOLE & SAUCE
- Use a drinking glass to cut a hole about 3” wide in center of each slice of bread
- Toast bread (both slice and circular cut-out) in sausage drippings over med for 2 min, until golden, then flip the bread and crack an egg in center of each hole, sprinkle with salt & pepper, cover & cook 3—5 min, or until desired doneness, then remove from pan
- Add maple syrup & vinegar to pan then cook over med for 1—2 min, stirring to loosen browned bits from pan, until slightly thickened and syrupy
4. GARNISH & GATHER
- Plate sausage patties alongside egg in a hole & toasted bread cut out
- Drizzle sausage with maple sauce, garnish with chopped green onion tops, and enjoy!
