Asparagus & Hollandaise

It's asparagus season! We always look forward to local spring veggies, and asparagus is one of the veggies that we just can't get enough of this time of year. Here's a recipe for one of our favorite ways to eat it: topped with homemade hollandaise. It's a great side for brunch, or it goes great as a side to grilled chicken or steak for dinner!

 

INGREDIENTS:

 

  • eggs
  • 4 oz unsalted butter
  • 1 tsp water
  • 2 tsp lemon juice
  • 1 lb asparagus
  • 2 tsp minced garlic
  • salt & pepper
  • oil

 

INSTRUCTIONS:

 

MAKE HOLLANDAISE

  • Separate egg yolks from egg whites, discarding whites
  • Melt butter in the microwave (or in a small pot) until bubbling but not browned
  • Place egg yolks, water, lemon juice, 1/4 tsp salt & 1/8 tsp pepper in a blender or small food processor and blend until smooth
  • With blender running on high, slowly drizzle in hot butter
  • Add salt & pepper to taste and add more lemon juice if desired

 

COOK ASPARAGUS

  • Heat 1 Tbsp oil over med-high
  • Add asparagus and cook 2–3 min
  • Add garlic and cook 1 more min, then season to taste with salt & pepper

 

GARNISH & GATHER

  • Arrange blistered asparagus on a serving platter and drizzle with hollandaise 
  • Serve with lemon wedges on the side, if desired
