Nature's Ugly Ducking: Celery Root

If the saying is true that we "eat with our eyes first" then it's no wonder that people shy away from celery root. It's an ugly, knobby, rough root veggies with a pale brown exterior. But inside, the creamy white center is bursting with refreshing, crisp flavor. Think parsley meets celery meets white turnip. It's one of nature's best kept secrets. 

Celery root, also called celeriac, is harvested in our neck of the woods at the end of Fall and can be found through the winter. The greens on this bad boy aren't your average snacktime celery, but make for a wonderful stock. For a lot of farmers, it's a tough crop to grow, but for eaters - it's easy to love!

Approaching a celery root for the first time can be a bit intimidating, but once you get in the swing of it you'll have no fear. We love this video from Melissa Clark at The New York Times on how exactly to get started with this ugly duckling.
