Chef's Corner: How to Caramelize an Onion

Caramelized onions bring a tangy sweetness to many dishes. Follow these simple steps for the perfectly caramelized onions:
 
1. Heat 2 tbsp oil over medium-high heat.
 
2. When the oil begins to get thin and ripple, add sliced onions and a pinch of salt and stir until coated. The salt will help to draw the moisture out of the onions.
 
3. Continue to stir the onions and watch as they darken. If they begin to stick to the bottom of the pan too much, add a small amount of water, broth or wine and stir vigorously. This is known as "deglazing." The liquid should evaporate almost immediately while loosening the onions.
 
4. Continue stirring and deglazing until the onions have reached the color and texture you desire. The onions should be dark, translucent and have a sweet odor.
