Dicing 101

The question

“What is the difference in a large dice vs. a medium dice vs. a small dice?” - Kate, G&G Home Chef

The answer:

A dice is a type of cube cut. All cube cuts are accomplished the same way: start by cutting your veggies into strips then simply run your knife through again to make cubes. The goal in chopping is to use as few knife strokes as possible. The only difference is the size:

Size Dice: Large
Fancy Name: Carré
Measure: 3/4 inch cube

 

Size Dice: Medium
Fancy Name: Parmentier
Measure: 1/2 inch cube

 

Size Dice: Small
Fancy Name: Macédoine
Measure: 1/4 inch cube

 

Size Dice: Tiny
Fancy Name: Brunoise
Measure: 1/8 inch cube

 

Size Dice: Tinier
Fancy Name: Fine Brunoise
Measure: 1/16 inch cube

 

The most important thing to remember when dicing is that consistency is key. Having your veggies cut all the same size will allow for more even cooking.
