How to Make Great Drop Dumplings

Any respectable Southern cook should have a great drop dumpling recipe in their toolkit. Great dumplings are fluffy & tender inside with a firm bite on the outside. The secret to the fluff lies in the reaction between the buttermilk and the baking soda. When baking soda meets buttermilk, they react to produce carbon dioxide, which gets trapped in the batter, making tiny air pockets.
Ingredients:
- 3/4 cup flour
- 1 t baking powder
- 1/4 t baking soda
- 2 Tbsp Banner Butter
- 1/4 c buttermilk (we love Banner Butter's new buttermilk!)
- 1 T herbs (like parsley, sage or tarragon)
Directions:
- Melt butter
- Chop herbs
- Combine butter with buttermilk & herbs
- Add flour, baking soda, baking powder, salt & pepper
- Stir until just mixed
