How to Roll Out Homemade Gnocchi

Today we delivered our Ricotta Gnocchi to homes across Atlanta. Testing this meal, we were pretty excited to see how easy it was to make our own gnocchi! Because this gnocchi is made with ricotta & egg rather than potato, it is light as air. A trick to getting it just right is to roll it out and cut it without overhandling it. 

Once you've made your dough & divided it, you'll roll out each dough ball into a long snake-like tube. Keep your hands flat & roll from your finger tips to the bottom of your palm, moving your whole arm back & forth. Start in the middle & work your way out to the ends until you get it somewhere between a quarter & a nickle. 

Now, time to cut! Use the base of your knife rather than the tip. Apply pressure & let the knife do the cutting. And that's it! You're ready to boil those bad boys & top them with your kale & sausage saute!
