Our Favorite Vinaigrettes from the Vinaigrette Whisperer

We dubbed Chef Jarrett Stieber the vinaigrette whisperer for a reason - his vinaigrettes elevate his already amazing recipes to the next level! He taught us that vinaigrettes aren’t just for salads. They’re great over grains, meats & more.
Here are some our favorite vinaigrettes from the vinaigrette whisperer himself:
Cocoa Nib Vinaigrette
We dubbed Chef Jarrett Stieber the vinaigrette whisperer for a reason - this vinaigrette! We served it over Lamb Chops with Roasted Potatoes & Arugula and it was divine!
- 1 Tbsp oil
- 2 Tbsp apple cider vinegar
- 1 Tbsp honey
- 1 Tbsp cocoa nibs
- salt & pepper to taste
Coffee Vinaigrette
This vinaigrette is delicious over pork!
- 2 Tbsp oil
- 2 Tbsp cider vinegar
- 1 Tbsp honey
- 1/2 tsp ground espresso
- salt & pepper to taste
Olive Vinaigrette
Simply puree this one in a food processor or blender for a salty & citrus-y vinaigrette with a hint of sweet. For a little texture, only puree half the olives and chop the remaining olives. It is incredible over seafood, like this week's Roasted Salmon.
- 3 Tbsp oil
- 1/2 c kalamata olives
- 2 Tbsp cider vinegar
- 2 Tbsp honey
- 1/2 orange, juiced
Buttermilk Vinaigrette
If creamy is your preference, this vinaigrette is for you! We served it over Chicken Sausage with Baby Fennel, Shiitake Mushrooms & Peaches.
- 2 Tbsp oil
- 2 Tbsp cider vinegar
- 1 Tbsp honey
- 2 Tbsp whole buttermilk
- salt & pepper to taste
The key to these vinaigrettes is to whisk vigorously to get a thick & creamy emulsion.
