Peach BBQ Shrimp Kabobs

You don't need to work up a sweat to grill (or oven-bake) these fun, lip-smacking shrimp kebabs! Toss shrimp, peaches, summer squash, mushrooms, peppers & onions in a peachy, homemade BBQ sauce. Skewer & grill (or bake) then top with even more sauce, garnish with cilantro & enjoy with your favorite side dish. This recipe is a crowd-pleaser, and it pairs well with any sides you'll be enjoying this weekend!
INGREDIENTS:
- 10 wooden skewers
- 1 peach
- 4 oz mushrooms
- 1 cup summer squash
- 1 cup sweet pepper
- 2 Tbsp melted butter
- 2 Tbsp peach butter
- 3 Tbsp tomato paste
- 1 Tbsp white vinegar
- 1 tsp Worcestershire
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- 1/4 tsp cayenne
- 8 oz peeled & deveined shrimp
- 1/2 cup red onion pieces
- 1 Tbsp chopped cilantro
- 1 lime
- salt & pepper
INSTRUCTIONS:
1. PREHEAT OVEN OR GRILL & PREP VEGGIES
- Preheat oven to 450°F or preheat grill
- Soak skewers in water
- Remove pit and dice peach into 1-inch pieces
- Cut mushrooms in half
- Slice summer squash into 1/4” slices
- Remove seeds and dice pepper into 1-inch pieces
2. MAKE BBQ SKEWERS
- Make BBQ sauce by whisking to combine melted butter with peach butter, tomato paste, vinegar, Worcestershire, garlic powder, smoked paprika, chili powder & cayenne, then season with salt & pepper to taste
- Pat shrimp dry and season with salt & pepper
- In a large bowl, toss together veggies, peaches, shrimp & HALF of BBQ sauce
- Thread shrimp, peach, mushroom, squash, pepper & onion onto skewers then place on greased baking sheet
3. COOK SKEWERS
- Bake 8—10 min, until shrimp are cooked through, or grill for 2— 4 min per side, until shrimp are pink and opaque
- Juice lime into remaining BBQ sauce, stir to combine, and add salt & pepper to taste
4. GARNISH & GATHER
- Serve skewers slathered with remaining peach BBQ sauce then garnish with cilantro
- Enjoy paired with your favorite side like rice, cornbread or pasta salad!
