Peach & Blueberry Goat Cheese Galette


Summer fruit deserves all the attention in the world! Peaches and blueberries are pretty much the highlight of our week, so here's an easy dessert recipe that you can cook them up in: a peach & blueberry goat cheese galette with mint!!


You'll need:

  • peaches, sliced
  • 1/2 pint blueberries
  • 1 puff pastry, thawed
  • 5 oz goat cheese, softened
  • 4 oz cream cheese, softened
  • 2 Tbsp honey
  • 1 lemon, zested & juiced
  • 3 Tbsp butter, melted
  • a few pinches of flaky salt
  • 1/4 cup fresh mint leaves, roughly chopped or sliced into ribbons


To make:

  • Preheat the oven to 385ºF and unfold the puff pastry dough onto a sheet pan
  • In a bowl, mix goat cheese, cream cheese, honey, lemon juice & zest (use all but about 1 tsp of the zest here), then spread the mixture across the puff pastry, leaving a 1.5" border around the edges
  • Arrange peach slices & blueberries on goat cheese mixture, then fold edges over securely
  • Brush melted butter over the folded edges, then sprinkle with flaky salt
  • Bake for about 30 min, until fruit is cooked and pastry is browned and golden
  • Garnish with mint and remaining lemon zest, cut into squares, and enjoy! Goes great with a scoop of vanilla ice cream.
